Is there an early version of UNIX that I can install on my PC or in a VM that has no GUI? Just want to e x p e r i e n c e it.

If you're talking about actual commercial enterprise SysV UNIX operating systems, then no you wont be able to use them on PC or inside VMs. They're not free and require vendor specific proprietary hardware to run on.
