XFCE does exactly what you need a GUI to do, without all the extraneous flashy crap of Gnome, Unity, and (shudder) KDE.

Lubuntu. All the justwerks of Ubuntu without the bloat and visual bullshit, plenty customizable, and the small ISO size betrays the vast hardware support. Lubuntu is the shit on my $1,000 gaming laptop, my old desktop, and my $30 chinkpad.
