In one case, the input is just the position of the knobs, and in the other you'd need to add a thermometer. Looks like the first is more simple to me ? Or am I missing something ?

these devices are turbine-powered
you already have a turbine and LED's packed together (both need to be in the faucet)
so it's little additional effort to include a tiny microcontroller or maybe even just a few passive components and a thermistor along with those to determine which LED to light up based on the resistance of the thermistor (aka, the temperature)

using the handles would basically mean the LED feature would need to be sold along with the whole faucet assembly, since there'd be no other good way to do it, and it wouldn't even be accurate (you could have cold water coming out of the hot tap and you wouldn't know it wasn't hot since you're not measuring it)
