Can someone explain to me what the difference between a 1070 STRIX OG-all these other bullshit appellations and a regular 1070 is? The new NVIDIA 1070s with the faster memory are 350 dollars, the 1070 STRIXs from ASUS are 420 dollars on sale. Are they worth the extra seventy bucks? What exactly is the difference?

brands rework the base gpu.
they either change components (usually with better ones, so a little better memory or better cooling, 2 fans instead of one, additional ports to output, etc) and also OC the cards.
typically, these changes are not worth 70 burgers, the increase of power of the card is still minimal, it's just quality of life improvements.
