Is the Wi-Fi unit on the X370 chipset able to be fully disabled with current motherboards? If so, has anyone checked that it isn't actually still emitting?

You can disable it in the bios on the asrock boards. Don't know about the other manufactures.

Maybe I've misunderstood, but everything I've read seemed to indicate a wi-fi module was part of the chipset.

Are you talking about the arm security processor module included on new AMD processors or chipsets? If yes, then that is disabled on the consumer based products, but it can be enabled for corporate and security customers. For example AMD pro based systems fall under this umbrella and need support from the chipset to actually run.
