Yeah, I've had a few folks ask me if they should get 32 GB. Honestly, you won't use even 16 GB for anything currently. It would take heavy multitasking or ridiculous bullshit to get close to needing 32 GB.
Media creation and production can make use of more RAM, but I can't think of a thing in the standard user's toolbox that would need it.

I'm using 38% of my 32gb, general daily usage sits around 45% or so
But my development work sees me running four or five instances of visual studio at once alongside the usual pile of browser tabs, sublime text and a bunch of electron horrors (slack, etc. that i mostly need for work)
I could survive on 16gb I guess but 32 makes it painless to run a VM for testing and give it 8gb or so to play with

It's more than enough for me. Just the perfect amount with reserve for emergencies. Having a lot of memory if you don't require it is pointless. You're literally throwing away money because that amount will never be used. Unless you create a RAMDisk which would probably be a good idea.

When I got my laptop last year I splurged for 16GiB RAM. Sometimes I've been thinking that perhaps I did waste my money, but then I take a look at the resources just running a few browser windows with mixed media in actually takes nowadays.
It's also nice being able to fire up VM's and demanding programs without having to worry about closing other stuff. The only bottleneck when I'm not taxing the GPU much is my CPU.

My advice is always
Get as much RAM as you can afford.
GNU/Linux will fill every single byte of memory with files that have been opened. A lot of things will respond faster on a box with lots of RAM just because a lot of the files opened will already be in memory.
I don't strictly need 32GB RAM on my desktop or 16GB RAM on my laptop, but it does speed things up. And it is nice to have those things for when I do need to run something that does need a lot of RAM.
Honestly, with todays prices... why wouldn't you just max that out?
