Ways to get root access on a linux box if you happen to have access to run java code as a regular user on that box?
Is it even possible, any particular things to look for?

This account is not sandboxed or chrooted or anything.
Can a regular user steal /etc/shadow?

Remember kids. Don't do bad things. You go to Hell for that.

I don't think you'd have access to /etc/shadow, but often time the root password is hashed with MD5, which is ridiculous.
My Vultr server has an md5 hash for the root (Ubuntu 16.10), and my digitalocean server uses SHA-512.
If the hash begins with $1, then it's fucked. If it begins with $6 then it's strong.

try to find some software/hardware exploits
linux is safe otherwise

No.
