This is how normiebook looks in landscape mode it has half the info cropped down in an eternal loading wheel in the right

This is how it looks in my Moto G using split screen with 7.1.1. No problems at all. I'm using normiebook as an example. It happens with almost every app.

Here's my old-ass Galaxy Tab 4 from 2013.
In your case I suggest installing some kind of custom ROM and changing the DPI or something.

Yes, but you can easily root via TWRP anyways if you install an AOSP ROM. I just use stock on mine since I don't give a fuck.

I can't find a good ROM for my device. XDA roms look sketchy I don't want to screw the s-pen ;_;

I've never had troubles with XDA ROMs, but yeah the S-Pen probably won't work in ROMs other than Samsung's and the mods of them.
