1. Get Enterprise, Ent LTSB, Server 2016 or Education
2. Read https://technet.microsoft.com/en-us/itpro/windows/manage/manage-connections-from-windows-operating-system-components-to-microsoft-services and select options that fits your needs. YOu access Group Policies with gpedit.msc
3. Run PowerShell and remove unwanted apps with get-appxpackage and remove-appxpackage commands. There are easy to edit scripts for that however.
