I have a serious question: How do people become grey hats (or any other kind of 'hat', really)? Are they mostly just savants who like to tinker and stumble upon things?

Yes! The hat color represents what you do with your knowledge of netsec/human psychology. Google what each hat means and then you'll know
Greyhat
>White hat that wants money/services
Black Hat
>we iz anons
>we are region
>never 4get
White Hat
>ok I fucked your shit but here's how to fix it
>based

nerds who do "hax" and sell them to skids

How would one get into this kind of stuff? Any blogs/books/forums? or is that a stupid question?

I'm not the one you should be asking. Head over to /dpt/ and ask around for netsec courses, motor over to /fglt/ and ask for server distros (BSD, Redhat etc) and start learning. Then you choose your hat according to what you like and add it to your resume I think. Don't quote me on any of this though since it is 4:50AM
you have to be a full-on autist. you have to be capable of sitting at your machine for three days at a stretch without sleeping, pissing into a bottle, shitting into your sock, obsessively reading documentation, teaching yourself coding, looking for vulnerabilities, trying shit over and over.
