I have a 980Ti SLI setup (EVGA Hybrid, AIO water cooled).
Should I get the 1080Ti and take these two bad boys out?

Yeah it works breddy well for gaymes, although devs are lazy now and don't add SLI support or proper support until months after release and release patches to fix issues.
For example, Hitman doesn't work with SLI at all, there's constant glitches.
Rise of Tomb Raider works great, Deus Ex MD works ok now.
I do have a Vive, though, which doesn't support SLI at all.

I gayme at 1440p and CUDA core for work related stuff. It does get hot, but I have a nice fan setup now (it took me weeks to figure out) and the Hybrid cooler is amazing.

Yeah, but I had a loaner 1080 just to see how it is, and that thing is marvelous. Doesn't get hot or sweat at 1440p. I assume the 1080Ti is miles ahead of that.
