Could we just have a decent e-reader that:
1) Allows drm-free books
2) Doesn't spy on their readers.
3) competing book stores
or
3) allows custom Operating Systems on them.
Why does this not exist?

Mine is a sony I got 2-3 years ago and does the first 2 (not sure what you mean for 3).
Don't think there is enough demand for custom OS for it to be worthwhile. E-readers are targeted to a special niche of normies.

Pretty much any reader+calibre+airplane mode does 1 and 2.

not every company cares about their customers. e.g amazon ereaders spy on their users and forces their format.
I'm not sure about the others, but if they sync pages between devices it means they are spying.

You wot, I use a kindle paperwhite and you can use pretty much any format you want pdf/epub/mobi and similar. And you can just disable the synch features or turn off wi-fi altogether.
