I'm going to be installing in UEFI mode alongside W10, so it needs to support that. I want a pretty UI to do general tasks on (as well as learning linux).

ui and distro are not mutually exclusive.
simple google search would help you out alot.
i recommend gentoo, its great for beginners.

Will it play nice with UEFI and W10? The only distros I can find that do Ubuntu, Kubuntu, and Mint.
The new KDE looks nice, but I've heard bad things about Kubuntu. Would it be better to get Ubuntu and put KDE on it?
