Gaining access to an encrypted disk and spying on someone with a trojan are not the same thing. You cannot unencrypt AES-encrypted disks without the encryption key, regardless of the OS. If the user of the phone is in possession of it, however, you can trick them into running vulnerable code on their machine via arbitrary code execution exploits, and you could use that to bypass encryption entirely to just have a program send you files while the unencrypted disk is mounted. The problem was that the FBI didn't break into the system beforehand.

If it wasn't a phone, and instead it were something like desktop Windows, with a disk encrypted by veracrypt, the FBI would have the same problem.

For the number of exploits, just count them. For model specific parts, note the "Affected Devices" column of the table. For both Android and iOS, not all vulnerabilities affect all devices. The reason why you're pointing to the 6/6 Plus is because that's about all you *can* point to in furtherance of your argument that updates render iOS devices practically unusable. Even as of last year, the iPhone 5S still accounted for 30ish percent of the iOS population. Shit, when my wife had to RMA her LG G3 for the second time, she dug out her old iPhone 4S and used it for a week while she waited for the Languid Gooks to ship her a replacement phone. To the best of my knowledge, the nuance behind the '70 iPhones unlocked for Feds by Apple' headlines was...

1) Older phones and/or iOS versions that didn't support full-device encryption via the Secure Element. This includes iPhones 5S and older, and iOS versions 7 and earlier. These phones, due to their less-protected nature, required a far less unreasonable burden of effort on Apple's part, and were thus requestable by the authorities.

2) iCloud backups. iCloud backups are stored on Apple's servers, and while they are encrypted, Apple does hold a master key that can decrypt them. Because Apple possesses these backups on their own property (their servers), it is well within judicial authority to subpoena the backups.

In fact, in the San Bernardino case, one of the things Apple said in their own defense was that, if the authorities had just left the phone alone, Apple could've attempted to induce an iCloud backup and hand the resulting backup over, as they've done in the past. The ham-handed way in which the authorities bungled that possibility led many to suspect deliberate sabotage in order to force this matter, in an attempt to establish legal precedent in the FBI's favor.

tl;dr Your iPhone is actually relatively safe, despite the "revelation" that Apple cooperated with the Feds in certain cases.
