Just got my raspberry pi 3 in the post. Set up a torrent server, but it doesn't seem too useful considering my connection is shit. Considering a retropi instead, thoughts?

If you're trying to learn general linux admin stuff try doing each of these from a fresh install each time.
>set up a proxy server
>set up a vnc server
>set up a mysql server and expose odbc so that you can query remotely
>configure apache2
>configure nginx
>configure firewall
>set up a process to start on boot using systemd and stop as soon as possible after system is notified that it will be going down
