So Mozilla comes out with a new version of Firefox every few weeks. I got a little sick of it so I turned off auto updates. Now I'm a few years behind and shit is starting to get glitchy.
Most of their "upgrades" seem to be geared around social media.

I don't give half a fuck about social media. I just want a browser that works and isn't mining all my data like Chrome. Deny it all you want, but that's exactly what chrome does.
tl;dr realistically what version of FF do I need for full functionality, or how do I get that without all the social media bullshit?

I tried palemoon about a year ago and had to switch back. I can't remember what it was specifically, but I had a lot of functionality problems with it. Seems like a lot of things I did online, or wanted to do, would not work.

Also there's nothing about social networks in vanilla Firefox, just "services" that you can *optionally* install as extensions to share with FB or Twitter, and Chrome doesn't mine data except reasonable things like your IP what you tell it to sync.
