I set up my Raspberry Pi 3 with NOOBS just to mess around. I'd like to make a cool emulator from it, in addition to some home networking things.
I'm wondering if I can add OpenMediaVault to the Pi so I can boot it up in "network mode" so that I can access all my hard drives from the network.
Or, am I limited to a one-function use with this thing, meaning it's the OpenMediaVault or emulator/other things?

Is your computer limited to just one program because you've installed word or added visualboy to it? Why would you think the same about the rpi?

Because it appears that you need to boot the Rpi from a blank SD with only OpenMediaVault on it.
Which would mean no normal OS.
You could just dualboot, that's what i do.
