Look into LineageOS, see if it has a build for your device, and if not, see if anyone wants to maintain one or build it yourself.

They show you how to compile an Ubuntu Kernel for the Nexus 5. You would just have to do what they did and create your own custom Android OS for your phone based on a Linux Kernel.
