Because single threaded performance is the bottleneck when it comes to games. Barely any games use more than four threads. Ryzen will not appeal to gamers if an i5-6600K or i5-7600K will give better FPS at less cost.
Considering that the 1800X is the highest clocked one, it only gets worse at the $300 1700.

Sure it will be great for professional software, but OEMs are not going to want to use Ryzen because it does not have integrated graphics. Every Ryzen desktop is going to require a discrete graphics card which cuts profits. On top of this Intel already has most OEMs homed in.
