Would I just run a switch out of my modem, then to my router. That way I have several Ethernet ports behind my router. Does this work for spectrum?

You can have multiple IP addresses in one household, yes.
Whether your ISP will let you is a whole other matter. Contact them and ask.

I have contacted them and installing a second line is out of the question. As it would have them drilling holes in the house. I heard an anon tell me that connecting a switch to the modem would allow me to retrieve another IP address.

If they won't do it without installing a second line there's nothing else you can do. Supplying IP addresses is on your ISPs end entirely.

Get your modem in bridge mode, then stick a L2 switch after it (Don't forget into vlan)
Then, stick in two routers and you're gold
