With Powershell's lack of simplicity compared to a UNIX style shell, I'm not sure I would want to.
Used GUI Windows Server a while back though, it was alright I guess.

I didn't use it very extensively, so there's a lot I can't comment on. I'd imagine there's a bunch of tricks and whatnot I didn't learn in the brief time I used it too.
But my main issue was with managing the firewall, specifically forwarding ports to connected machines since I used it for a router back then. I managed to get my ports forwarded, but it's a convoluted and annoying process that I don't remember how I managed to get done.
In contrast, iptables is fucking easy.

I had core on a brix for awhile, 99% of the time the resources you save aren't really worth it.
fucking pain to set up too, scrolling through pages of help commands isn't fun

How much memory do you save compared to GUI anyway, isn't it like 500MB vs 1GB?
I couldn't set up headless so far because no powershell skills, but I don't see myself learning PS anytime soon. I know it would be a good investment, but it's just sooo bad and unlogical..
