Don't remember what pooling is in this context, but its because PS2 has no issue with N-key rollover by default, while USB keyboards have to specifically account for it.
USB for mouse because I'm sceptical about the old PS2 port having the same 'accuracy' with high sensitivity/polling mice and whatnot.

Some keyboards have separate logic for PS/2, most usb <-> PS/2 converters are just rewiring, it wouldn't work without a PS/2 controller inside the keyboard (and indeed it doesn't work with all keyboards).
