I Want to start a project that would lead to me learning a lot. Right now I'm torn between trying to make a game engine or trying to Make an emulator. Which one should I put my time into?

I'm Interested in both so for instance if you know a good resource for learning how to make an Emulator please share.

Make a Game Boy emulator.
It uses an 8080 variant, you can find a ton of documentation about it.
