The extra $40 or whatever for the 480 8gb is the go. It'll have the longevity to get you through VR in the first stages when it happens.
I'm waiting on a 1060 6gb because I don't have an AMD suppler near me, should hold me out well. But will be going to the next gen cards when their released plus Ryzen.

For 1080p/60fps on medium/high or higher for slightly older titles for almost anything, look at rx 460's or 1050/1050ti's

For a bit more on each side, look at the rx 470/480 and gtx 1060
