Make the table yourself, kitchen working plates are a good base for this.
For the chair get the Ikea Markus, got one, too. You can see it's a cheap chair but for the money it's good.
For the mic i'd look at a cheap Rode or Audio Technica for 100-150 bucks, AT2020 is a good choice, even the USB one.
What about keyboard? Imho the new Ducky Zero TKL or what it's called looks great, but don't waste you money on Razer or Corsair gaymen trash.
Monitor.. no idea, 1440p144Hz should be no problem with your budget, should be around $500 for a decent one, maybe 1-2 1080p60Hz used ones as secondaries.
The PC itself.. well, up to you.

Will I notice a significant difference between the 1050 2GB and the 1050 Ti 4GB?

I'm looking for an ATX Z270 board with a budget of ~$200. I'm thinking about the Gigabyte Gaming5 or 7 but I was wondering if MSI or ASUS had something better/more featured for the same prices. Mild to moderate overclocking is a consideration but I'm not going to try record breaking or anything like that. Also I have a local Microcenter so their walk in deals count for price.

The 6 core should be fine for now. You can overclock them well.
It's highly recommended you put the little bit extra in for a 480-1060.
The performance gap between them and the next rung down is too much not to consider them.
I suggest you compare them side by side for things like transistor counts and memory speed. That should settle it for you. Benchmarks are kind of fucky when it comes to predicting longevity of a card.

8gb 470 would do little better in a few things(4-5fps from memory). But for 1080p gaming you'd be better off with the 480 4gb.
I'll still stress saving the extra 20-30$ for the 8gb 480 will be the way to go. You should always aim for longevity in hardware.

Their both slightly overclocked. So it's doesn't really matter from a hardware POV.
I was once told that OC'd versions are tested for overclock making them more likely to be a winner of the silicon lottery. But I think that's bullshit.
But the BIG difrence between them is the style. They're non reference cards. They've got aftermarket heat sinks and fans.
If you care how your card looks then that's something to look into.

Don't fret that you touch something. it's unlikely that you'll fuck it. Makers have put a lot of effort in to protect components from static because that'll lead to them being RMA'd, cutting into profits.
Really we only need to touch the door once to get rid of high charges. Low volt static is fairly safe. So you don't need to go full autistic with it. PC builders will use a strap because that do it all day, and that increases the chance of their own fuck up's.

Depends on how much you want to spend. You're not going to be running new games at 1440p/144Hz without either reducing the image quality heavily or spending a lot of money on the system.

See above. It's not really a question of "utilizing" hyperthreading as much as it is about how well the game's engine can use more than 4 cores. For most (new or newish)games, the average FPS is about the same, but an i7 will have higher minimums. If you want a setup that can run games at 144Hz, I'd recommend an i7. Otherwise an i5 will do just fine, at 1440p you'll be mostly limited by your GPU anyway.

Retrieving the game data from SSD means fewer and shorter loading screens. You won't see higher FPS, but it's definitely a noticeable QoL improvement. If the M.2 uses SATA, you won't see benefit from going for M.2 SSD instead of one that uses SATA natively.

Well... personally I'm a poor student at the moment and gaming isn't really that big of a priority for me, so I'd go for two good 1080p panels instead of 1440p in the first place.

So really depends on how much you're willing to spend. To make effective use of the 144Hz screen, you'd need to spend well over $1k before you consider any of the peripherals, and if you want to keep up with new titles, you'll have to be willing to put another $600 into a new GPU in a year or two. Does that sound like the kind of money you want to spend on gaming, not even counting the actual games? If so, go for it. But you can have pretty great experience without the 144Hz screen, so if you're not really sure or have better things to do with that money, considering getting the 75Hz screen, an unlocked i5 and a 1070.

I want to upgrade this 4 year old toaster. The goal is Max settings, 1080p and 60fps. Is it possible wth a budget of 500-600$?

And is OCing worth it, considering I've never done it?

Generally good, but go for 2400 RAM which should cost the same, mobo will be around 90-100€ which is too expensive for B250 if you ask me.
mATX should be cheaper. SSD is obviously good, but you can get a cheaper PNY CS1311, ADATA SU800 or SanDisk Ultra II which are also good.
Case is imho completely overrated, safe choice but personally i'd never buy it.

Monitors don't affect your gpu performance, only affects what you're seeing. Right? If your GPU is putting out 60-100fps for example you will get screen tearing because your 144hz monitor will be putting out 144fps, however freesync avoids this.

I have a 1080 SC ACX 3.0 with the upgraded thermals. I have no temp problems at all. EVGA will let me upgrade to ICX for $99. Why would I do this?

It's not the thermal paste, you nutter.
Look at the diamond spot in the thermal paste area. It's only touching 2.5 out of the 5 heatpipes. One isn't even making contact at all. This is why ASUS's STRIX coolers perform like dual-fan models from other brands.

Ironically Sapphire's mid-range NITRO cooler has much better thermal performance than the STRIX. The STRIX really shits the bed under sustained thermal loads since it only has two semi-thick heatpipes offloading most of the heat on finned surfaces that only covers one and a half fans.
Sapphire's heatpipes on the other hand has two thick and one semi-thick heatpipes coming out of a copper plate for slightly worse thermal transfer, but better thermal load distribution across those heatpipes. At load with similar overclocks, the Nitro cooler matches the STRIX for similar fan RPM percentages.
