Well they already did on the 1060 and under... By ditching SLI entirely. AMD doesn't require a bridge for Crossfire anymore, but they also don't produce a GPU capable of competing directly with the remaining SLI capable offerings from Nvidia, so maybe you simply can't ditch it on something that's actually high-end.

We're maybe one or two generations away. GPUs are so stupidly powerful now that only running them at obscenely high resolutions causes severe FPS drop

That and virtually nobody codes for multi-gpu setups so half the games you want to use them for either won't use one gpu at all or will outright crash
