ex macbook 2015 user here: you shouldn't have to jump through hoops to get something excrutiatingly simple done when all the other OSs do that already. Hell even the foot fungus OS will let you merge 2 folders together easily.

Pretty much my experience at Apple stores. Most of their solutions are "replace device" or "delete everything on it and then icloud won't recognize it thus assuming it's a new device and wipe itself clean for it, deleting all your data in the process".

You don't need stores to provide such shitty service, maybe just give people the tools to do it, as for replacing devices, Apple rarely does it, other manufacturers are much more generous and ask way less questions.

Apple loses easily.

This proves you've never laid a finger on anything from Apple. I've had store employees opening fucking full retail boxes in front of me (not shitty refurb replacement devices) to change iPhones for me because I literally just physically didn't like them. Due to minor, minor imperfections like the screen assembly being 0.1mm uneven between both top corners. I've done this with the 4 which one time had a micron level scratch only visible in certain light, the 5 due to a very slightly uneven back light, and the 5S due to the previously mentioned shit, then the SE for a rattling power button.

You have no fucking idea what you're talking about. You're gathering shit you've heard about and assumptions to try and form them into experience which you then convince yourself to be true.
