Not much, you get higher memory bandwith which can give you a few extra fps here and there and faster encoding times etc.
But it is not really something you notice, much like overclocking an i7 (unless its really low clocked stock).. In some cases it can give you a little boost, but I just do it for the fun of overclocking and benchmarking.

I tried to overclock it, but i didn't like the way the motherboard plays with the voltage. You can't even leave it as is. When you change the frequency, it changes the voltage for you. And i don't want to run 4,4GHz@1,35V. Sure, i can adjust the voltages but i've been monitoring them for some time and i'm pretty sure i didn't choose a good motherboard. I'm not an overclocker afterall, i just have a general idea how to do it.

Yes, you have to set the voltages manually.. You set all the voltages to their stock value (not auto), then you raise vcore as needed.
For 4.5-4.6ghz you probably wont need much, haven't oc'd skylake, so dont know, but +0.1vcore I whould guess is plenty.
Then just run prime 95 on small fft for 30minutes to check for stability and temps.

Well, actually.. i did overclock in the past (E6420, Athlon X2 5000+, Celeron 300A.. basically nothing as new as the 6700K) and it was totally different. I've set the voltage to let's say 1,55V and that was the maximum voltage.
On this particular motherboard, there's no such thing. There are some settings like Offset, Adaptive and i don't really understand what should i do with it.
Also, from my experience with the E6420, not even 8 hours of tests with Prime is enough. I've had several failures even after 6-9 hours of stress testing.

You select "override" for most boards, then you should get a new menu with the actual voltage you can set. If there isn't override there, try the different ones until you get the option to set a vcore.
As for prime, what youre saying is definitely true, but when are you gonna maxload your cpu for 8+ hours?
Now of course you could get errors sooner in different situations, so what you could do is find the max stable cpu frequency (30min prime no errors) with the max voltage/temp you feel comfortable with, then clock it 100mhz down. Then you can be pretty safe about stability.
If youre still worried, let it prime while you sleep one night.

Personally I like just having a constant voltage. It only uses lower voltages/frequencies when its in idle anyway, not sure how much power you save in the long run, but if youre concerned about that I whould recommend not overclocking at all..

And i've noticed one thing - unless i'm using manual voltage settings, then even though the CPU is locked to it's stock frequency, but with Turbo enabled (and set to 4.0GHz, so it should not make any difference), the voltage is like 1,32V under load.

My standard procedure when overclocking is:
Disable c-states and other power saving features, turbo and throttling.
Also disable loadline calibration (either drops or increases volts during load. I want to keep in constant.)
Disable cpu and pcie spread spectrum.
Set all voltages to their default values (not auto).
Then I start overclocking.
I see your load temp is a bit high at stock, so I whouldn't raise voltage much over 1.25v. But that is probably more than enough for 4.4 or 4.5ghz.
You just have to play around and find out :)

The "bug" is actually still present in all AMD series including the current one. Nvidia cards do not have that problem with two monitors, but they also gets hot if you plug in 3 monitors or 4K monitors. It's actually AMD ramping up the RAM clock in the GPU to maximum when two non-identical monitors. Use a program like GPU-Z to see the RAM clock boosted to maximum when you have two monitors connected.
