OK so I want to be able to seed and be able to use music files at the same time without having to create two copies of the same files just to seed them.

I have my music download folder set up in MusicBee but whenever I try to change any metadata such as tags the file itself changes and obviously that conflicts with the torrent client and it goes back to an incomplete download whenever I restart my client and it goes over the metadata I have changed.

What can I do to resolve this?

yes, definitely. it would depend on your connection/seeding size ofc but doing this gave me some GBs of files to cross-seed and those MBs really do build up over time.
also, you'll become familiar with which MAM uploaders source most/all of their uploads from BIB. I used to bookmark their uploads page and check most days for new uploads.
