I have an idea on why these operating systems exist, but they are free. How would I get my hands on one of the operating systems and what would be the consequences of using it as a desktop. Would it even be able to run games or applications in general? Otherwise it looks like a pretty comfortable os that I am not sure I should put effort into getting.

Industry 8.1 is simply a copy of 8.1 Pro/Enterprise with additional features such as UWF and Keyboard Filter. All programs and games should work.
WES7(when configured properly during IBW)/POSReady 7 would run games and applications just fine.
POSReady 2009 have quite high levels of application compatibility as well, albeit having some less-known programs to not work due to a relatively minor lack of .dlls and system files. As for WEPOS1.1, even basic antivirus software cannot load properly.
