Only if they have different resolutions.
If they have the same resolution they actually consume less power.
Not everybody knows that the resolution requirement is independent of the screens sizes, so you can have full HD 22' or 20' or 24' - it will still consume less power, no matter the diagonal.
It depends on the video connection. 3 or more monitors on HDMI will actually consume less than 2. I know on space stations and the like, its not allowed to only have 1 powered monitor at the time.
