I purchased a 6700k off Amazon a week and a half ago for $340. 7700k is available for $10 more. Am I crazy for considering returning the 6700k and purchasing a 7700k? I have an Asus z170 and a bios update provides support for it.
I'm aware the increase in performance is minimal, almost nonexistance. However I dropped $1600 on this build and it seems silly to not eke out any little bit I can to make it last.

But the 6700k is more power efficient and the performance is literally the same per clock.
You already have a graphics card so literally the only upside of the 7gen cpus i.e. onboard 4k is useless. Save the $10. Get some LEDs or a fan.

It depends how well your 6700k clocks. Is it hitting 4.7ghz? If so, it's not worth. If it's a shit chip, yeah, do it.

The only reasonable upgrade for lasting value will be if 6 core coffeelake ends up compatible.
