I've been thinking about this for a while.
I'm getting sick of all these companies that track all of our shit.
I'm thinking of switching everything to linux and deleting all my accounts, and creating new ones with fake info. Use VPNs, the works.
Has anybody done this before? How easy was it?

The point is to stop using them entirely. I don't know why you would but the point remains, if you make all new fake accounts this accounts just get tied together as one person because you're one person using them. Either use them or don't. Pick one.
Then you have to choose what level you're going to choose. Are you willing to keep your phone and let Verizon and ATT and T-Mobile and Sprint keep all your SMS records? Then you'll have to let SOME ISP somewhere have them. Are you starting to understand what going dark ACTUALLY means?
Realistically if you don't trust a site use 10minute mail to decide. If it's actually something you want then use it. If not, no problem.
Install TempleOS as your one and only operating system. You may then occasionally go to the library or an Internet cafe where you can spread the word of God.
Going dark is going hermit. You'll either have to cut off almost all online communication to normies, or deal with having some of your communication be tracked.
Putting up a new account in a fake name won't help. Tracking companies dont care about your ip or identity - it's your behavior and the content you're providing / consuming.
