I have 64gb ram, it serves me well. More than I actually use but I never need to worry about paging every.
It's comfy to have a game on one desktop, some browsers on another two, sublime with a million folders open and still be able to spin up a VM to do something else without paging once.

If you have 2x4GB the only upgrade path is 4x4GB
If you want 4x8GB you will have to buy all 4 sticks.

1-2GB if all you do is facebook and email.
2-4GB for mild gaming, but usually only one major program running at a time. Photo editing. The classics will run fine.
8GB for normal gaming, video editing, etc.
16GB for everything I mentioned and more. The true sweet spot.
