You're now forced to remain on that BIOS, or modify a later BIOS and hope you know enough to keep the OC functionality from the old version.
My 5820k got a CPU microcode update that boosted memory read/write speeds by a good 15-25%

They're good. I got Gigabyte 1080 G1s, mostly due to availability, I got them close to release and this was what I could find that wasn't extremely overpriced. Mine don't OC extremely well, they top out at ~2050MHz maybe, you might get another 100MHz or some shit out of 1080s sometimes, whether I got unlucky or it's because of the power limit I've no idea. Still, an extre <5% clock isn't going to do much if anything in practice and I'm glad I didn't buy EVGAs with no VRM cooling.

Depends on the game. Some aren't supported, others scale like 90%. People don't know and/or don't want to believe this but at 4K having both cards at x16/x16 PCIe 3.0 actually makes a difference. I've seen like 15% better performance in x16/x16 vs. x8/x8, in TW3 with TAA for instance. In any case, if you're looking for 60FPS and 4K 1080SLI is the cheapest option (Titan XP SLI is ridiculously expensive)

Most of the time, yes, at maxed or close to maxed settings, not much AA though. Some games bottleneck hard on CPU though, not in the sense that a 4790K is shit but TW:WH for instance runs a single thread at 100% and when you get to battles with 5000+ units and projectiles flying all over the place it can't keep up. Some are also just unoptimized, like Dishonored 2 (although it runs at 60+ FPS most of the time, in most levels)

I don't like DP because Windows is ""smart"" and removes monitors entirely when they're turned off. This completely fucks desktop icons and window positioning and I sometimes remote into my computer with monitors turned off. The Dell doesn't do this, so it's on DP.

I assume so, I've got a friend with a 2560x1440 144Hz monitor on a 1080, it runs fins as far as I know.

Core clock is pointless now-a-days anyways. The real bottle neck is RAM. The big advantage of even low end core 4/8 thread Xeon E5's is the quad channel memory.
For the higher order Xeon's (like the 6/12, 10/20) you get 10MB+ more L3 cache. Ofc you lose ~1-1.5GHz of max clock. But you'll waste those cycles waiting for memory access anyways.
