Pulled the USB drive out and now my primary Windows 7 computer does not recognize the USB flash drive. But my other Windows 7 computer is able to read the drive. So I know the drive is OK.

Just reboot. The system will close everything down and write caches.
Safe ejection is an atavism left by USB 1.0. It isn't necessary anymore.
