I use a desktop at work but with a 4K monitor and a 2560x1440 monitor. Both run off a GT 740, the 4K runs at 30 Hz though... but for coding its fine.

I run circles around the plebs who are "too good" to buy their own hardware and bring it in. Thats fine, keep using those two 1280x1024 monitors from 2005...

Honestly 2 screens aren't that bad as long as you have the discipline not to start playing around on the second monitor.
Having 2 virtual desktops is what I prefer, one for working and one for documentation, but there's no real difference between that and dual screens as long as you don't start browsing facebook and shit. The problem is that most normal people I know just aren't disciplined enough.

I am not that experienced with VM.
I am speaking from a fresh graduate point of view who have been freelancing for a while and worked on a couple of projects.
One of which was developing on a windows using VS, and it was total clusterfuck compared to the other projects I worked on.
I get why many people defend Windows for nostalgic and convenience sake, most of the time that is, but that doesn't mean we should pay for it. In the end, new technologies will arrive and the ones you paid and invested in will most likely wont serve you after 3-4 years of usage.
