Its made in Japan and has some very excellent build quality. The creator of C++ uses a HHKB and Richard Stallman has been using one since 1997. Since you need a numpad then the full size realforce keyboards also have similar build quality to the HHKB, with an exception for the Type Heaven and RGB

The first cherry mx switch was blacks back in 1984. Those keyboards still work today while a rubberdome form the same time period would work, but it feels very mushy. They last longer and thats really about it. Other then that mechanical switches are more customizable then rubber domes. You can get some cheap mechanical keyboards for like 30 bucks if you want to try one out

It really depends on what you want to do with it, a couple contact switches supported by springs, what i assume the stinkyboard is, or a full pedal.
The latter you could rig something to work off an existing switch, like a tig welding foot pedal or one of the driving game arrangements that used to be so popular.

If you don't mind if it actuates at the bottom, you could take any pushbutton and have a plate which is supported by a spring that you then press down on, as you bottom out you press the pushbutton. Get an arduino or some clone with an atmega32u4 and program it to do whatever you want it to do. You can emulate a keyboard or a mouse quite easily with some libraries for the arduino.

I think it would be easier to just get a used racing wheel and take the foot pedal from that. Then if you want to add some tactile/clicky feedback you can just get an omron switch. You don't even need to wire it up, just place it at the base of the pedal and let it actuate.

here's a very basic idea that is probably terrible for a variety of reasons

There are probably commercial solutions to what you're looking for, but if I were to diy a mechanism of the sort, I'd do something along these lines.

Though I'd probably separate the tactile and electrical part and have the contact be made with two metal leafs (obviously a bit sturdier than those found in mx-style switches) that get opened/closed by some part of the tactile mechanism.

Either you just design the contact mechanism in a way that this won't happen, e.g. just have them touch lightly and then have it stay like that for the rest of the travel. That'd probably be quite easy to do, all you'd just have to adjust the shape of the pusher a bit.

Or have them move fairly freely but make them go back to their original positions with springs.

I'd have to prototype this myself, but I feel like the first solution would be quite easy to do.

That would work, you'd just have add some debounce time. And it'd wear down over time, something you don't really want with electrical contacts.

Ducky One with PBT keycaps has all those, but the media keys are limited to volume only. As for the macros, oh boy there are a lot of those. Almost every key on the keyboard can be programmed into a macro, and there are three layers meaning you can have three different macros on the same key. The dye-sub PBT keycaps are a nice addition too since they don't yellow over time and are more resistant to wear then ABS. Also since they are sublimated the dye is burned into the keycap meaning that in never wears off and has the nice side effect in that it the legends can't be felt since they have become a permanent part of the keycap
