Just open up the built-in windows performance monitor and leave it recording when you go away.
It's all there.
I had one obnoxious updater process use tons of drive bandwidth and one full core of CPU when let idle.
Turned out it was 100% read in WinSxS folder as it was slowly analysing the entirety of the poor thing to determine what windows components are already installed.
Killed the bastard - kept on returning, so I disabled his autostart service. That killed him for good and am bothered no more.
I update once every several weeks so I'll have it bother me some other time, but for now no suspicious things going on when I'm away.

2. leave it on, it records on its own when open (maybe make sure hdd tab is opened although I think it records it regardless)

After an update I always run the full routine of:
1. Manual opt-out / disable of bloat (this includes group policies and renaming some system files)

4. Add custom firewall rules
5. Finally restart the pc a few times and make sure nothing new pops up that I don't want (like most recently some weird file sync service)
After that it's 99% done, but M$ always comes up with something new so still gotta keep an eye out for suspicious shit, so you can find it and manually nuke it.
