You install just the base system and the DE of your choice (or no DE at all). No internet browser, no software center, no email client, no lightdm, no menu editor, no office suite, no pdf viewer, no chat program, no nothing.

Just the very basic stuff to give you a DE and you can customize everything how you like it from there.
