The gunk on the mouse is from our hands, obviously. Trying to clean it with water is a nightmare, it just gets slimy and sticky, a knife is the way to go.

The black gunk on the mouse pad I have no idea, but it's incredibly annoying when it comes loose and interferes with the sensor.
