Is there any smart watch or fitness tracker that allows you to run arbitrary software of your choosing on it?
If not, is there one that allows you to export health data (preferably an API, not manual CSV export) and do whatever you like with it? Fitbit is really guarded about the data they collect and makes it very painful or impossible to access the raw data in order to lock you into the larger fitness and health software platform they're selling.

Its because they process the data on their servers, notice how you cant sync without internet connection.
I don't think there are watches that give you the data without giving it to the manufacterer since data is just too valuable to them.
Closest you will get is probably making a Phone app or get a Chinese step counter clone and hack around with it
