I've cobbled together a NAS box made from old LGA775 parts.
The memory is not ECC so I am concerned about the rate of corruption.
so my question /g/ is how important is ECC memory?

You're not going to need it on home servers or anywhere where you won't get fired if the server shits the bed, which is almost never a memory issue.
I'm using a Dell R510 for my nas box, I would recommend ECC memory but, my previous nas box didn't and I never had a problem. ECC memory is more for mission critical stuff.

ECC is not necessary or worth it in your scenario.
ECC is really only useful for servers that will be running a heavy load and need to have a 99% uptime. It's hella expensive compared to nonECC RAM and won't be worth the investment for hobby use. A good reboot once a week on a home server without ECC should keep it running for a while.
