Is it worth taking a job as a mainframe COBOL developer?
I'm making the switch to software development from IT and this is the only gig I've been able to land.
They are offering 50k as the salary which feels extremely low.
Thoughts?

If you're a EU citizen, having a COBOL reference might be a good start to someday land you a 200k+ job as COBOL developer in a Swiss bank.

Get the job, learn the language for a year or so and move to Europe. All the big insurance companies and banks use as400 and other similar ancient systems that require cobol to maintain.

50k is not enough to have to subject one's self to COBOL. You can get paid 100k just to write JavaScript with some framework. They should be offering at least as much, plus benefits.
