Work your way up. There is a learning curve.

I suggest Debian and Lubuntu and if you don't like either and you're feeling adventurous, try Arch. I need it because I'm limited on specs on the computer I'm running.

Been using Arch for almost a year now, same install. I'm bad at updating and I don't read Arch wiki for update warnings.

Never had any problems what so ever. Only thing you need to do is reboot if your Nvidia drivers updated.

So far it's the most stable distro I've used for this long without reinstalling. I came from Ubuntu 12.04 to Fedora 21 to Mint17, all of which eventually slowed down or started becoming more and more buggy as time went on. Arch just works.

Solus is pretty nice. It can be a little light on available packages because it's so new though.
I use it on my work laptop and it definitely more stable than Arch. Check on the packages you need and decide based on that.
