The only gapps I use are Play Store, YouTube and Drive.
I'm rooted and have uninstalled all the other gapps.
Problem is that most apps use Google Play Services to synch, if I uninstall it they will cease to get push notifications

Not sure considering I don't use anything that requires the play services but this article seems to be pretty detailed on how to spoof them so that apps don't break.
