I'm just starting to use VMware since it's what we use as a vendor for our services and it's pretty much industry standard.
What will I be using it for? My company does a ton of offsite sysadmin work as well as networking so I'm getting additional practice with Server 2012, AD, GPOs, working with Cisco Meraki switches, and probably messing with weeam
exsi 6.5 w/vcenter is love.

I just use libvirt and fuck around with the XMLs.
They're particularly nice for networking stuff.
Like, it's piss easy to bridge them to SRIOV devices.
Is docker a VM?

not without a expensive service contract you aren't

Surprisingly it doesnt support Server 2016 and the HTML 5 client is broken on it.

No. Docker is a container.
I have a dual E5520 rig with 48GB running ESXi 6.5 and it works pretty good. I got a warning on the upgrade that my CPU might not be supported in the future but oh well. Runs Win2012 R2 for DNS and dicking around with domains and an Ubuntu 16.04 VM for a Minecraft server.
