So why is gentoo or solus better than arch linux?

Gentoo is amazing. I can have multiple conflicting versions of packages, or 64 and 32 bit libraries at once. And it's all fine because the programs that depend on specific architectures or specific versions of programs are compiled from source, so portage just links them with the version it knows it depends on.

If you've ever had to deal with dependency issues with packages you'll know why this is awesome.

Also being able to manually include (or exclude) certain features from any package or your kernel is extremely useful. For example, I was able to simply remove the SSL heartbeat extension and recompile my packages when the heartbleed vuln came out.

Did I even mention Portage?

It's not the worst distro, but there's nothing it offers that makes it worth using over any other distros and it has the worst fucking user base.

I found that installing gentoo was just too complicated, I didn't know what to pick on the USE flags or whatever and I feel silly for asking. I don't really see an issue with arch, it is customizable enough but not a headache and 3 hours to install. Maybe I'm just silly or I'm looking at the wrong stuff...

I also REALLY like the aur :p

My own 2 cents.
I have installed arch both with arch anywhere and antergos.
Arch anywhere gets you a much more minimal system, since it is literally just base arch, but with an installer for you.
Antergos is a gui installer that also adds a few things (I think base package count is around 700 compared to ~450 with arch).
antergos, however, is much easier to use and configure. The extra packages can be removed, and there isn't really any 'bloat' perse.
I actually reinstalled arch with antergos after using arch anywhere for this exact reason. There was just say too much shit you have to manually configure, and then when things don't work you need to spend time figuring out why. Antergos sets everything up for you, but doesn't take any freedom way.

There are 2 types of use flags: global (in make.conf file) and local (in package.use file) both are in /etc/portage folder. You just type things you like: jpeg, alsa, png, unicode and things you don't like: -systemd, -pulseaudio, -kde, -geoloc in make.conf. If some package need some blacklisted element, you edit package.use file.

The reason Solus has taken /g/ by storm so quickly is because it is geared towards power users even more than arch, while also being friendly to noobs. It is truly first in it's class. No other distro has been able to appeal to ALL users as well as Solus. It also runs on a wide range of hardware, with a minimum memory requirement of only 512 mb.
