What site should I use to set up an email account?
if you're asking this question with no other parameters, then the answer is gmail.

Privacy might be a parameter.

it might be. any number of other parameters might be important.
if the OP is asking this question without knowing or apparently caring to specify any of these parameters, the best answer is the simplest one: gmail.
don't overcomplicate things.

Quick question. Should I use distinct email addresses for different sites?

If your mail provider supports plus notation ([email protected]) and their registration form doesn't reject this as an invalid character for email addresses, I would strongly suggest doing so. If you suddenly receive spam for one of these suffixed addresses, you can filter them easily.
Otherwise, with a mail domain and server of your own, you may have as many mailboxes as you want. Or as many as your mail provider supports, if you buy the latter part from an established mail service.
