*nix buffers file transfers and creation so that there's always "extra space" in order to avoid fragmentation. You can still defrag, it just has less of an effect. NTFS doesn't buffer file transfers with empty space and just transfers the file alone. You don't actually have to worry about defrag in NTFS either though. Between increased disk size, increased hard-drive read speed, and the fact that NTFS can defrag itself automatically over time, there's no reason to do it yourself.
